San Antonio Chocolate-Cajeta Flan Cake

From office parties to holiday buffets, temptation confronts us almost every day during the holiday season and here's one of my favorites. - LatinaTNT

San Antonio Chocolate-Cajeta Flan Cake



1 (18.25-ounce) box chocolate or devil's food cake mix, plus ingredients needed to make cake ( I prefer Duncan Hines)

1 (14-ounce) can sweetened condensed milk

1 (12-ounce) can evaporated milk

1/2 cup regular milk or water

8 ounces cream cheese, room temperature

1 teaspoon vanilla extract

5 eggs ( I Prefer HEB's Jumbo Eggs For Baking)

1 (10.9-ounce) jar cajeta (you may want to buy an extra jar just to feed off of while baking.)



Preheat oven to 350 F. Spray a 12-cup Bundt pan (see note) with nonstick cooking spray. Spray nonstick cooking spray on one side of a piece of aluminum foil large enough to cover the Bundt pan and form a tight seal. Set aside.

Prepare chocolate cake batter according to package instructions.

Set aside.

Prepare the flan by mixing in a blender the canned milks, regular milk or water, cream cheese, vanilla and eggs. Set aside. Soften the cajeta in its jar (no lid) in the microwave. Pour into prepared Bundt pan and tip the pan so it runs around the sides. Add the cake batter. Add the flan mixture. It will come nearly up to the brim. It's OK if you have a little flan left over. Now use the prepared aluminum foil to seal the Bundt pan tightly.

Carefully place the Bundt pan inside a larger baking pan in the oven. (A disposable pan works fine.) Pour hot water in the larger pan to a depth of 2 inches surrounding the Bundt pan. Bake cake for 2 hours. Do not uncover during baking time. After the baking time is up, remove Bundt pan from water and allow to cool for 15 minutes.

Remove foil seal and invert the cake onto a platter with a good rim. The cake will have migrated to the bottom, and the flan will end up on the top; the cajeta will drip down the sides. Makes 12 to 16 servings.

Note: If you don't have a 12-cup Bundt, you may use a 10-cup Bundt and bake the leftover batter in an 8x4-inch loaf pan.
Pour enough batter into the prepared 10-cup pan to come 2 inches from the rim of the pan. Pour remaining cake batter into prepared loaf pan. Pour flan mixture to come up within 1 inch of the prepared Bundt pan. Pour remaining flan mixture in loaf pan. Proceed with recipe, but bake 10-cup pan for 1 hour and 55 minutes, and loaf pan for 1 hour and 15 minutes.

Have Americans Become A Nation Of Rude And Disrespectful Citizens?

Michelle Obama and Dr. Jill Biden attended NASCAR's season finale at Homestead-Miami Speedway to honor military troops, families and to recognize companies who have committed to hire and train veterans and military spouses.


The fact is, The First Lady and Dr. Jill Biden have been supporting the military from the beginning of this administration. Of course if one is a faithful Faux (Fox) Entertainment News viewer, one wouldn’t have heard of their diligent work and commitment to the military and their families. Please do this country and yourselves a favor...pick up a newspapers, magazine etc.. and learn about what's going on in the real world.  It’s despicable that any American would boo a First Lady. The First Lady and Second Lady were there to endorse a charity that actually helps people. God forbid that should happen in America these days.

This NASCAR event and the behavior of its participants is perhaps the most un-American thing I’ve seen in some time.   Shame on you for being a participant of the fear, hate, anger party showing its true colors...as always. - LatinaTNT

A day at the races quickly turned ugly for Michelle Obama and Jill Biden as they were booed before kicking off NASCAR’s season finale in Florida.


The First Lady and the Vice President’s wife were on hand at the race yesterday to honour military troops and their families through Mrs Obama's Joining Forces program.

But as their arrival was announced to say the ceremonial 'Gentleman, start your engines,' a chorus of loud booing could be heard above the cheers in the crowd.  (Full Story & Video)

Representative Lloyd Doggett is one of our heroes. He has never forgotten that he represents us, not corporate lobbyists. For over three decades, Doggett has been an advocate for the values of working families. Doggett is a hard core Democrat through and through.

As for the opponent, Joaquin Castro, he and his campaign have been receiving donations from Republicans and Party members who have done incredible damage to education in the state of Texas. These donors are the same members of the party that with one hand are trying to eliminate Medicare and privatize Social Security and with the other hand subsidize corporation cronies while cutting anything and everything that helps Texas families.

We the people of Texas want better and we have a choice. Will it be Congressman Doggett, the man who gets things done (and may I add, who has been an effective pain in the neck to Republicans) or an inexperienced young Joaquin Castro, who flips at the sign of a GOP dollars, (no that’s not called bipartisanship), accepting donations from those who insist on balancing the Texas budget on the backs of the “little people.” I’m going for the candidate who focuses on doing their job, not one who’s looking for a job. Joaquin Castro Is Still At It and Gets a Big Warm GOP Money Hug

As you recall, it was Castro, who in sworn court testimony and news reports, was linked with secretly working with Republicans to draw a district for himself at the expense of Charlie Gonzalez. We now also know that Joaquin Castro is raking in a lot of money from traditionally Republican donors. Of course, in the past he's accepted checks from Altria (Big Tobacco), J.P. Morgan Chase, and Wal-Mart. But now, in his race to unseat progressive champion Lloyd Doggett, deep-pocketed GOP donors are throwing their $$$ at Castro. And he’s accepting it. It's an old political trick: "If you can't convince them, confuse them.” We know from past pranks, Joaquin Castro is schooled when it comes to tricks, but this time, it won’t work.

Republicans are trying very hard to get rid of Congressman Lloyd Doggett and it's showing.  It’s becoming more apparent that Doggett's opponent Joaquin Castro is blinded by a desire for bipartisanship or if he’s a Blue Dog Democrat, verging on being a Republican. I think the latter.

A check of financial donors provided by Joaquin Castro and his campaign, show Castro has many big business and Republicans that are backing his bid for office. These are the some of the same Republicans who also backed GOP candidates such as Presidential Ticket John McCain and Sarah Palin, John” Say No To Everything” Cornyn and let’s not forget Gov. (2012 Presidential candidate) Rick “Social Security A Ponzi Scheme” Perry.

Let’s remember…GOP candidate Rick Perry is a former Democrat. Mitt Romney does “whichever direction the wind is blowing test” for his stance on policy. They have either changed their mind or want to be elected so badly that they don't know what they stand for and merely parrot what they think will get them elected. It would be more appropriate for us to say that these candidates and Joaquin Castro belong to the Chameleon Party. That's the party for so-called non-career politicians who look for any way to get back or stay on the public payroll; state house, state senate or congress.

There are teachers, construction workers, small family farmers, nurses, housewives, nurses, small business shop owners, local/state employees, manufacturing/production employees, worker bees of all sorts that want true representation in Washington. The people of Texas want someone that knows and understands the true American society. Texas wants real citizen representation. The people are tired of flip floppers and candidates being a yes man/woman just for the sake of getting elected. They can’t be 100% loyal to their personal interest and careers and 100% loyal to the people they represent and who elected thm. Joaquin Castro, you can’t have it both ways. - LatinaTNT

Joe Paterno Didn't Abuse Anyone But He Facilitated It.




Penn State riot: Students held a protest rally Wednesday night after head coach Joe Paterno was fired in the wake of a sex-abuse scandal. Then, Penn State students flipped over a media van and riot police moved in.

I only have one thing to say about the Penn State Riot and that's "Grow The Hell Up"!  A piece of advice.  Acting like juveniles throwing a tantrum is not the appropriate response to this situation. No one is happy about any of this in any sense, but it doesn't mean that this kind of reaction should take place. I am certain that the majority of these students hadn't even read the Grand Jury report, because if they had, I'm sure we'd have a different reaction.  Now....

This is what happens to schools/universities that allow athletics and coaches to be bigger than the school itself.  Paterno chose not to pursue this further than he was legally required to because heaven forbid that there's something other than football taking up his precious time.  I hope they fire all the coaches who were there during Sandusky's time, and especially Mike McQueary, the person who saw everything and chose to call daddy instead of 911.

Joe Paterno didn't abuse anyone but he sure as hell facilitated it!   Joe Paterno gave 40 years of his life to the college and it only took one act of non-action, one bad decision to throw it all out the window. -LatinaTNT
